Almond Flour Pumpkin Bread (GF, DF)
Almond Flour Pumpkin Bread
Ingredients:
- 3 eggs
- 1 cup pumpkin puree
- 1/3 cup maple syrup
- 2 tsp vanilla extract
- 2.5 cups almond flour
- 1/2 cup oat flour
- 1 tbsp pumpkin spice
- 1 tsp baking soda
- 1/2 tsp pink sea salt (or salt of choice)
- 1/2 cup dark chocolate chips
+ sprinkle of dark chocolate chips to top the bread
Instructions:
1) Preheat oven to 350 degrees F (dab a loaf pan with coconut oil or avocado oil to prevent sticking.)
2) In large bowl add wet ingredients (pumpkin puree, eggs, maple syrup and vanilla extract). Whisk.
3) Then add in the dry ingredients (almond flour, oat flour, pumpkin spice, baking soda, salt). Stir until well mixed.
4) Pour batter into loaf pan with spatula and sprinkle chocolate chips on top.
5) Bake 50-60 minutes. Test the middle with a toothpick to know when it is done.
6) Let cool for 30 minutes, then serve warm!
Tastes great chilled as well. (I store my loaf in the fridge to get it to keep longer.)
